Vegetable Hakka Noodles

This is one of the very simple chinese dishes and also one of my favourites , also cooks in minutes ...good to go for an evening snack . Here goes the ingredients for veg hakka noodles.

Ingredients:

1 Packet hakka Noodles (from store )
1 Cup finely shredded Cabbage
1 Large Carrot diced into long thin pieces
1 medium Green Capsicum
1 medium Red Capsicum sliced
1 bunch of Spring onions chopped finely
2 Tbsp Oil



Seasoning:
-----------

2 tsp Soy Sauce
1 tsp Hot Sauce( as per spice requirement)
1/4 tsp of black pepper
Salt as required

Preparation:
------------

To Cook the noodles , Heat around 10 Cups of water in a wide bottemed vessel and bring it to Boil.
Drop the noodles into the water and boil them for 2 - 3 minutes (do not boil more than 3 mts), now the noodles are partially cooked . Drain the noodles and wash them in cold water , apply 1/2 tsp of oil to the noodles and leave it aside . Now heat the frying pan , add 2 tbsp oil , add all the vegetables and stir -fry. Do not over cook the vegetables , now add the noodles to the veggies and stir fry on a high flame for 3 minutes .
Garnish with chopped spring onions and Serve HOT.
